Newbie here. I was wondering about all the good properties (health benefits) of fruit
and berries and what happens to them when they are fermented. Do they
increase, leave due to the fermentation, or do they stay in the wine? TYIA!

Without going to my references for details, at least some of the beneficial compounds in fruit are water and/or alcohol soluble. Alcohol has been used since way back to extract active components from herbs etc. It is called a tincture. Vanilla extract is a tincture. Recipes have survived from the old days for soaking elderberries in brandy or whatever to preserve the syrup to cure flue and colds.
