so here is my first mosti kit... its a castel del papa I started out knowing nothing but a few things I read online... so I mixed everything up like the instructions said... and BAM

so finally I checked the wine and it went from 1.060 to 1.020 almost over night! so its finally racking time... I got everything sanitized and set up.... notice the computer in the background with fine vine wines how to movie playing lol

now after only 3 days in the secondary the bubbles are slowing way down.. almost stopping... I think I will let it sit in the secondary for a while anyway even if there are not any bubbles just to let things settle and the oak to really soak in... will it hurt anything if it sits for another 10 days even if the fermentation has stopped?
 
You chose a great kit for your first foray into winemaking. I can smell the fermentation fumes from here. I made a Castel del Papa in 2007 that turned out great. Unfortunately, I bought and made it with four other friends, so I only got 6 bottles after bottling.

Don't be strung too tight and drink this too soon. This kit was my New years wine 1/1/08 and I have tasted it a couple of times but have restrained myself in hopes that this one could be really special. It is drinkable at one year but why waste it?It could beREALLY goodin another six to 12 months! Keep us up to speed on your progress and BTW WELCOME!
 
Guitar, great pictures! Do your instructions call for stirring the wine each day after the first 3 days? My Mosti kit, Pinot Noir, calls for this.


It is cool to watch the progress on these wines. It is really making me appreciate the tastes of commercial wines.

yes it did say to stir.. It has been in he secondary for only 2 days and seems to have most of the fermentation slowing down... the airlock is barely bubbling... and the hyrometer reads 1.000 so everything is looking pritty good... I was just worried about how it slowed down so much and was afraid it was going to get into a stuck fermentation... but I am going to let it sit and see how it does...

and jack on rainy... did you bulk age yours? or went ahead and bottle it and let it age in the bottle?

Did this last spring, don't know if I'll be able to restrain myself as much as Jackonrainy.

Don't be fooled by the lack of bubbles, I see you followed the instructions and put the oak chips in the carboy before racking. The oak (and the racking itself) will cause a lot of CO2 to come out of solution. I added the oak after racking to a MM Shiraz last year - can you say Volcano

So, it is possible that fermentation is continuing but the CO2 is dissolving rather than bubbling up. Mine ended at 0.994

Can't wait til next summer to try a bottle.

I started my Mosti Original All Juice Cabernet last night and can't wait to see what happens with it. This looks like a great batch of wine may have to make that my next wine kit.
 
Last year I did an All Juice Chardonnay, Trebbiano, Amarone and Pinot Grigio in 2007 and they came out great. One lonely bottle of Amarone left.

Vince, I did the first three last year also plus a Chardillon which is no longer offered but was the best white we've made to date.
Our Treb is a yr and needs to be tasted, the Amarone is still too young, and the Charonnay is bulk aging.. But I am thinking about the Pinot Gris for the next white. How does yours compare to your Treb?

While I enjoy them both and will buy both kits again, personally I like the Pinot Gris when drinking on its own or a lighter fair, it is light, fruity an crisp. The Trebbiano has more body tostand up to more flavorsso I prefer it more often with dinners. The Trebbianoplaced well atthe American Wine Society Fairfield County Chapter Amateur Wine Competition last year -> www.vincentdepaulwines.comwhen only aged 8 months after fermented to dry. Drink your Trebbiano now, perfectly aged. I also did a Ken Ridge Pinot Grigio which was very nice, consistent, yet uneventful in depth. The All Juice was much better, especially with a very little light oak added in. Hope this helps and take care.
