I'd wait... I'm surprised your starting SG was 1.055. That seems low. It should have been 1.085 or higher. Do the instructions not indicate what your starting SG should have been?
PCharles....1.055 seems about right for an Orchard Breezin kit.

bhmjones...personally I would not move ahead yet. For a couple of reasons.

1) I would expect the kit to drop to about .995. Make sure that the sg is constant for 3-4 days before moving on.

2) There is more going on than just converting the sugar to alcohol. I would wait till 8-10 days before moving on to stabilizing and clearing.

For those not familiar with these kits, they are a low alcohol mist wine. Thus the 'low' starting sg. The RJS instructions call for a 14 day period in the primary, then transfer to carboy to stabilize and clear. I feel that if the sg is down to .995 (for 3 days) by day 8-10, it is OK to progress, but I'm more likely to wait till 14 days than stabilze at 5-8 days.

Of course, different winemakers have different opinions.
