I'm making my first CC kit (Rosso Fortissimo Cuvee) Instructions(step 33)say to stir vigorously for 2 min. to drive off gas on days 20-22. Do you rack before doing this stirring? It only notes after this step degassing may be easier if you rack to primary. Either way, I'm guessing you rack off sediment, stir (probably degaslonger than 2 minutes with whip) then rack back to carboy and add sorbate/KMET and finings and stir again. You're degassing before adding sorbate/KMET?

Yes, rack, degas, add sulfite, fining agents.

Make sure it is warm (72-74) degrees.

Thanks for clarifying. Believe I'll use the Primary to degas and rack back to carboy and try the old heating pad to warm up.
