at first racking i should add 1 campden tablet crushed per 1 gallon of wine right?
 
I would think that a bit of sulfite would be more important at this point

campden = potassium metabisulfite (or sometimes sodium) = K-meta (or Na-meta)

milkman:

sometimes first racking is before fermentation is complete, and fermentation will be completed in the carboy. Since campden/K-meta will stun yeast and will slow (and perhaps inhibit) the completion of fermentation, do not add it until CERTAIN that fermentation is complete.

I don't sulfite after the first racking (going from primary to secondary). Fermentation typically isn't finished yet.
