    2014 Elderberries

Mountaineer, do you not keep track of how much juice you get from a pound of berries? I keep track of it so I know how much juice equals 15 lbs, etc. That way if the recipe calls for 30 lbs of berries I know how much juice to use. If I'm a little short of liquid I can either add more juice or...

    2014 Elderberries

Based on my experience with steaming I'd use those to attempt a 2 gallon batch of wine. Or, because they are cooked down some, you might want to think of them as an f-pac for a couple gallons of merlot. Think I'd really go for the 2 gallon batch of elderberry.

    Fermentation Longevity RC212

Thanks guys. I'll check it the next two days running. No change, I'll proceed accordingly.

    Fermentation Longevity RC212

Started off a 5 gal batch of cranberry/pomegranate from juice bought at Wally World. Gave all of the proper ingredients and used RC212 as the yeast. Had it on hand and figured what the heck, use it. This was on 28 Oct 14. SG was 1.09. I have watched this batch bubble ever since. I have...

    Bottled juice

Whole Pear juice Arne I made 5 gal of wine from straight pear juice for the very reason you stated, ie light flavor. I did something wrong. I made this approx 16 mo ago and it has not cleared. Has a brown look to it. Haven't tasted it yet, but I'm getting close, clear or not. Wondering if...

    Bottled juice

Hope this makes sense John T Lets say I steam juice 25 lbs. of plums. The 25lbs is suppose to be enough fruit to make 5 gallons of wine if I put the whole fruit in the primary bucket and mash it up. To get to 5gal for wine I have to add water. That same 25 lbs of plums when steam juiced...

    Bottled juice

I have found a fruit stand that sells fruit juices by the gallon. Prices are very reasonable. How many gallons of pure juice would you use to make a 5 gallon batch of wine? The norm of 5 lbs. of fruit per gallon of wine will probably not yield 1 gallon of juice. I know when I steam juice...

    Pear - pulpy

steam juicer I've read this with a great deal of interest. I have been steam juicing ALL of the fruit I have been using for the past year. That way I have the juice , but do not have to worry with any pulp or cap. I too have a batch of pear wine finishing up. I used steamed juice and...

    F-Pac

Made an F-Pac for some plum wine. Thought it would be needed for the taste. However, the taste came through just fine. Can I bottle the F-Pac in a sanitized bottle and keep until I do this again. Probably next spring. Anyone ever keep an F-Pac this long. It's under refrigeration at...

    Blackberry juice

Hey, I found my old (first) book on wine making. Written by an englishman, C.J.J.Berry. Supposedly one of Englands best at that time. The recipe I used called for 3 lbs of berries per gallon of wine. I remember this wine having a very good and strong flavor. So, if I used SBWs information...

    Blackberry juice

Thig, seriously doubt if steaming would change the SG unless my thought is correct about releasing some of the moisture.

    Blackberry juice

dralarms, is the juice you buy concentrated? 1/2 gal of juice doesn't seem like much to make 5 gal of wine. I know steamed juice appears to be thicker than pressed. To my eyes anyway. It appears to me that steaming releases some of the moisture from the berries back into the environment...

    Blackberry juice

Isn't it miraculous the number of people that will show up for something that's free so long as they don't have to do any work. A little work involved and they no longer want what your giving them. I have a small run of blackberries, two rows that equal approx 120 ft. Use to have both rows...

    Blackberry juice

Are you going to steam or press? Where did you get 100lbs of berries? That's a heep of pickin'.

    Blackberry juice

I steam most of the fruit I use so I am not dealing with any pulp. I have not steamed blackberries in the past. My question is has anyone steamed blackberries and if so how many pounds of berries did it take to make up a gallon of juice? I know it will vary depending on the juiciness (that a...

    Oak in my Melomel

bob1 I haven't put any oak in the peach and do not have any hungarian. I'll add the American to the peach as well. Cracked Yes I'm in the hot part of Texas. East Texas. But then again where in Texas is it cool? I'm in the process of putting in irrigation to all of my goodies. I lost 43...

    Oak in my Melomel

Hi Crackedcork, thanks for the quick response. Yes I keep track of the SG. I was concerned the oak might overpower the berry taste. Always best to ask than find out the hard way. Glad your the one that responded as I also had a question on elderberry bushs. I planted four this past spring...

    Oak in my Melomel

I have split up a 4 gal mead into blackberry melomel, blueberry melomel and peach melomel.. I have put 1 oz of American oak in both the blackberry and blueberry. Not having ever used oak before I think I need a little guidance. Fermentation seems to have ceased in the mel but I haven't just...

    Steam Juicing

Update Thought I'd spool this up and finish it off. I got the nipple put into the pail and makes it a lot easier to maintain the water level. Had a bear of a time finding a stainless steel nipple. Small town syndrome. Got all of the fruits steamed and was waiting to start making the wine...
