How important is the temp when bulk aging, and what is the best temp to keep your carboys at.

I have the WE Sonoma Cab with crushendo bulk aging. the flavors the last time I racked it were amazing. very young but very promising.

When bulk aging is it best to rack your wine off the lees when the kit says so then sulphite and top off to begin the aging, or just leave it be and let it age.(sulfiting of course). And if you think it could use more oak can you use oak in bulk aging or is it to late?

I dont have much experince, but if you have it, you might ad well try it out.Check the date on the yeast before you pitch it.
