    So it is a Cab/Sauv from a kit. I have added clearing agents Meta bisulphate, floksol/keisosol. Did the whole degassing/vigorous stirring thing, and let it sit in the basement as it is a little cooler down there (this really helped with the settling I found). Does this information help you a bit

    I have decided to bulk age my wine for the next little while. It has degassed and there is a pile of sediment at the bottom. Does it make sense to rack it to remove the sediment or will that expose it to to much air. I should note that it would be a double racking as I do not have another...

    The package says: Sorbate... nothing else. It appears without opening it that it is a powder... how do I mix it?

    I have a package of Metabisulphite and a pack for flokul and one with keisosol. I also have a sorbate which the instructions suggest I add at the very end of the process. I started the process of degassing by stirring (it takes forever) and this is what brought on the question... does adding...

    So I just went over the instructions again and I don't see a stabilizer. The instructions say to degas and then add the flokul and kiesosol and then the chitosan... any thoughts. thanks

    I am using the same yeast in each. The fermentation process is way way slower on the white

    So I started to kits the other day. One is a chardonnay and the other a Cabernet Sauvignon. The latter is fermenting like crazy and is at 1.01 after only 4 days and I am not worried about this one. The former how ever is just under 1.07 after the same period. Obviously a slow fermentation...
