    Yeah, why would you leave your $450 bottles somewhere easily pocketed? Even having $50 - $75 bottles out could be dangerous.

    I was reading up on this as well. Most bottles will take a #8 with a hand corker just fine. Many say that if you have a floor corker, the #9 is best as it give it that much more of a seal, but don't bother trying to with a hand corker.

    Ahh the benefits of hindsight. Arne brings a good point -- I've had some wine volcanos occur in my basement. It's a mess to clean up, and can get everywhere. It's amazing how your memory only lends to remember all the good things, and forget the bad.

    What was the SG when you started? SG will decrease as fermentation takes place because the yeast takes the sugar and converts it into alcohol and carbon dioxide. This will cause the SG to go down, as alcohol is lighter than water.

    When your local brewstore doesn't have what you need, check online! Shipping can be negligible compared to the cost of gasoline these days.

    I agree with grapeman, the rule of thumb is to add typically 1 tablet for each gallon when racking, but I've read and noticed that many people begin to shave that number down as the racking continues to avoid having too many sulfites.
