I used the water to start the kit, I topped up with similar red wine. The yeast was javelin 1118.
I'm thinking the yeast did not have enough nutrients and got stressed from using the reverse osmosis water?

I'm doing the same kit. Its in the secondary ferm stage which is almost complete. Abv is .994. it has the same residue as yours, this wine smells great so far.
Maybe from the currents or oak which was added in the primary ferm?
