    Recently I made Italian Nero Riesling kit. To make a long story short, it says on the instructions that it takes 7 to 10 days to clear. It has been two days and this stuff does not even have a single fleck of lees in it. Crystal clear. I understand it needs to age still but can it be bottled...

    Other Lingering ferment smell...

    Well I'm happy to update that the funky must taste/smell is almost not even noticeable in just four days after bottling. Any chance it had something to do with the lees in the secondary and once it got off that it's getting better??. I can't wait to taste this stuff in 6 mths

    This is sort of off but pertains to aging. I did this same kit and had the same amount of lees you did. However, instead of bulk aging I just bottled ( 30 bottles thanks to a steady hand!) I was wondering if it will age the same as bulk aging . Thanks ahead of time .

    Ok thanks guys. Musty is pretty accurate actually ! It's just such a shame because you can taste the great flavor behind that unpleasant one. I guess I'll wait a while longer before I bottle then let it sit with my fingers crossed. Thanks again guys!

    No I actually looked into some of the issues with the rotten egg thing but it doesn't smell anything like that. And the wine may very well be off balance however from research I've done that won't cause a fermenting smell. The smell is exactly the same as if you just start a fresh batch of wine...

    Well that's sounds great! I'm sure I wouldn't mind any if them but I will have to do a sampling I think that will prob be my best bet since everyone's taste buds are different. And for the juice bucket, I will def be looking into one of those. Thanks for the suggestions! John
