Clear wine in 2 days?

Recently I made Italian Nero Riesling kit. To make a long story short, it says on the instructions that it takes 7 to 10 days to clear. It has been two days and this stuff does not even have a single fleck of lees in it. Crystal clear. I understand it needs to age still but can it be bottled now? Also can I rack it off the settled lees or does it have to age with that cuck in the bottom? Thanks!
 
The longer you wait, the better.

Also, consider a racking and a waiting period before you bottle. This way, the fining agent is removed and will not end up in the bottle.
