How long would I simmer it for? How will I know when the water is out? And what if the grain alcohol I have is only 80%?

I have a wine I made with fresh fruit and berries. it has fermented down below an SG of 1.00. What store bought juice could I use to add some flavor and sweetness? Is this going to decrease the alcohol content if I add a gallon of juice to my 3 gallons of wine?

Here is what i did
I added 3 pounds of frozen strawberries to 5 cups of simple syrup boiling (10 cups of sugar). Let cool. Added cool water to 3 gallons. Sg is at 1.07. I added my yeast with the fresh fruit still in there. Is this ok so far? How long can I leave the fruit floating in my primary?
Is it possible to use an artificial sugar instead of real sugar? Or could I use a juice sweetened with Splenda or similar to make a juice wine? would that work?
So after I clean my bottles and give a kmeta spray, do I need to let the bottles dry completely before filling? Do I need to rinse out the kmeta too?

So after some experimenting, here is what I have came up with. Just wanted to share!
1. Get a big tub (like you would use for a keg, with the rope handles)
2. Fill it up a little more than half way with hot water.
3. Add 5 scoops of OxyClean
4. Stir good
