I have a 2014 Old Vine Zin that is currently in an oak barrel. I thought MLF was complete prior to putting the wine in the barrel but I just tested it via chromotography and it's only half way done or so.

The ph is 3.69

I thought about racking into glass carboys, put in warm area and then put in some more mlb. I don't know the SO2 level yet but if it's low enough, would it be advisable or worth trying MLF again?

It tastes good now but could it taste better if it finished MLF? Just not sure if it's worth going through.

As always, I appreciate the input.

You not only need to watch PH and SO2, but your ABV is also a factor. Check the specs on the MLB you are using and see if it can survive in the ABV you have.

If ok, I would give it another shot. There is no harm in it.
