Is there anyway to smooth out a wine that has too much alcohol? Its a cherry(vh) that has bulk aged for 15 months or so. Just added sorbate bc I am going to sweeten some of it. Just lookin for a way, if there is one, to smooth it out. Thanks.
 
None that you probably haven't already tried. But here is a list: Adding water, acid and sugar to re-balance . Finding another similar wine and blending that into it. If you haven't used fining with it, then perhaps use bentonite at .2glitre. Very fine filtration.
 
Hot wine
