What yeast for Apple-Cherry wine?

I have montrachet and Cotes des Blancs....

If those are 2 options - i would go with Cote Des Blanc.

If you can get to the LHBS - i would suggest lalvin 71B-1122.

I actually have two packets of that as well. Why use it over the CDB?

The 71b 1122 would be my choice also. It will be gentle with the light apple and cherry flavors

Dang that was what I was going to say. Early bird catches the worm.

Lalvin IMO would be a much better choice but to each his own.

It also metabolizes malic acid - and apples are high in malic acid.
