I am making vintners harvest black current ( 6 gallon batch with 2cans) the directions say after the second racking when specific gravity reaches 1.0-1.010 to add one Camden tablet per gallon. Doesn't that sound like to much . How much should I add ? Any help is much appreciated
 
Go by the label on your tablets. Most are one tablet per gallon. I would wait until the ferment is done though. SO2 can stress yeast that is still working.

Add the tablets (crushed well and dissolved in small amount of water or the wine ) after the sg reaches 1000 or below and stays the same for two or three days in a row.
 
You shouldn't be adding any at that time, the wine is still fermenting and you will stun the yeast ending up with a stuck fermentation. Never add k-meta (Campden Tablets) until wine is finished fermenting ( specific gravity below 1.000 and not changing for 3 days)
