I have a vario capacity stainless tank for bulk storage during secondary fermentation. The floating lids I understand are supposed to sit on the wine to eliminate exposure to air. I have read that you are supposed to see the wine slightly in the bottom of the air lock to assure you have the least amount of air in there. Is there an easy way to do this? I will inflate gasket with about a half inch of wine visible thru the translucent air lock but after 20 minutes or so the wine is below the air lock. I know its really close, I just want to make sure... Thanks, Syd
