Poking to take the tartness out of my white wine the acid level is good any suggestions

Draw a sample and add a bit of sugar to it. Should help it. Start with a small amount of sugar and add a little more til it tastes like you like it. Sometimes just letting the wine sit will bring it around. If you decide to sweeten the whole batch, remember to stabalize it or you mite wind up with the dreaded bottle bomb. Arne.

What varietal did you purchase?

Red or white.

7 months is early - if your TA levels are correct - i would suggest give it more time.

You may have to cold stabilize your wine. What grapes did you purchase?
