I'm currently making a Cellar Craft Rosso LR and Red Mountain. After stirring on day 6/7, I use a piece of racking cane to pin down the sack and snap the lid down. Once the airlock slightly slows down about day 10 or 11, I rack.
 
I finally bottled this (bulk since March 08). I'm having a glass now and it really turned out very nice. It has a nice bright Sangio cherry raspberry and also some plumb and licorice. The tannin levels are great, firm and round. <?: prefix = o ns = "urn:schemas-microsoft-com:eek:ffice:eek:ffice" />
It is drinking very nice and I’m not sure if it has hit its peak yet or not. It was at cellar temperature during the bulk time so may have slowed the aging down some.
