Greetings all,
I pulled my wine from summer storage under the house today. They had been down there for five months resting in the dark temp between 55*-65* until this fine October day. I had (4) 5-Gallon Carboys and (4) 1 gallons. Most of them seem fine except the two that I need to mention here. When reintroducing Meta to one 5 Gal batch of Barolo kit wine I could not help but notice hundreds of little ash like sediment getting kicked up while stirring. After about 10-15 minutes they began to rest again on the bottom. The color was light pinkish to white. I would of thought any sediment would be compact, if I had any sediment at all.
Then while adding meta to 1-gal of Blackberry wine the same thing happened.
The taste of these two batches seemed weaker than all the others. I think even the color was weaker. I still plan to bottle them for drinking but would not offer them as my best results.
Any input would be most welcome.
