Sumac wine?

If sumac lasts through the winter, can it still be harvested? I'm late to this great but am interested in trying a small batch. I live in zone 7.

I was wondering the same thing but I have enough wines in the queue this year. Earlier in the week I touched some still on the tree then licked my fingers - good flavor! You could make a cup of tea or cold soak a cup to gauge flavor and then decide.

The ideal harvest is after a few weeks without rain. The acids/ flavor wash off with rain.
I would try it, ,, actually I have done late harvest and then increased the pounds of berries.
