Strawberry wine with honey ????

When using honey as a sweetener, how do you add the honey? Do you just dump it into the must or do you need to boil it in the water before adding it to the must?

The last strawberry wine I made it said to boil the water then pour that over the strawberries to extract the flavor. Is that needed.

I plan on making the following recipe.

Recipe:
12 lbs. strawberries (fresh)
6 lbs. honey
3 teaspoons acid blend
3/4 teaspoon tannin
3 teaspoons yeast nutrient
3 Campden tables
1.5 teasponns pectic enzyme
1 package Montrachet yeast
2.625 gallons water
 
I don't boil the honey just warm it to 125 and let it set at that temp for about 20 minutes. That breraks down the protiens inn the honey and make the wine clear easier. I also skim off the wax on top at that time. you don't need to boil and I prefer not to, if you are using Campden Tabs. Check the PH before adding acid blend. Honey can be a bear to ferment abnd you want your ph right. I would get close to 3.5. You may want a little more fruit
 
Good call. I'll check ph after getting the must together and add the acid blend to get to that PH. Thanks for the advise.
