Not sure what you're asking here, are you inquiring about bulk aging without sulfite?

Probably asking about how long wine will be alright without the use of any sulfites. Many people used to and still do make wine without using sulfites. How long it will last depends on a lot of things among which would be acid levels and general sanitation practices.

As grapeman said, it'll depend on acid and sanitation, as well as ABV and storage conditions.
