Today I racked it off the lees after letting it clear for a little over two weeks. It looks great IMO. Now it's time to wait while it bulk ages for a while. I'm thinking at least six months and then into the bottle.

Here it is on the right. My Cherry Dragon's Blood is on the left.

I just racked this one tonight after bulk aging for just over seven months. I kept a glass out to give it a taste and it really was very good!! I had to stop myself from going back for more. Can't even imagine what this will be like in another year. Hopefully some bottles will make it that long. I added a bit of K-meta and am hoping to bottle this one next weekend.
