Just opened a winery within the past two months. As I expected, some of the wine kits are selling like crazy, so I started some 24 gallon batches. I have used 100 liter Marchisio variable capacity tanks. Primary I did in an open tank. First rack I have put the lid on.
Here's my question. I am worried a bit about the ability of the carbon dioxide to escape from the tanks if it is tightly sealed. Is this concern valid or shall I not worry?
