I have a wine that has almost completed its malolactic fermentation. I am wondering if it is possible to preserve this MLF culture and use it again next year.
I read that if you do a MLF inside a wooden barrel then any future wine that you store inside that barrel will also undergo a MLF.
Would I be able to freeze the lees to inoculate a wine at a later date?

I would not try to store the lees. It may be possible, but not worth the risk of ruining future wine because it wasn't stored properly. When others ask about keeping opened mlb, that is another matter. In that case you can reseal the container best you can and freeze it. The lees have all kinds of dead gunk in them, so I would throw that out.

Thanks for the reply. I wouldn't want to risk my entire batch for the sake of saving on the MLB but I might try it for one gallon only as an experiment. I don't mind loosing one gallon for the sake of science.

I concur with Grapeman. Just not worth it.
If you are doing more than 24 gal you may consider Lalvin 35 or VP41 culture
