I found an interesting article on Wikipedia that claims that to get the full health benefits from red wine, it should be sipped slowly.

Due to inactivation in the gut and liver, most of the resveratrol in imbibed red wine does not reach the blood circulation. However, when sipping slowly, absorption via the mucous membranes in the mouth can result in up to around 100 times the blood levels of resveratrol.[15]"
