I am going to add choc extract to this wine. I believe it is best to add it just before bottling. I also read that cherry really needs to age for good flavor. How long should I age this?

Most fruit wines should be fine after about 6 mnoths unless youi bring the abv way up on them then they need more time. I never add anything right before bottling! Always give everything at least 1 month just incase.
