Post MLF I removed my 500L tank lid to find a very thin layer of what looked like some type of start of bacterial growth or perhaps left over ML nutrient that wasn’t consumed during MLF. SO2 is at 8ppm and MLF just finished Malic acid is at zero. . PH is 3.45 and no off smells or flavors. VA is low at .41 g/l… if you look closely you can see small chunks of material that either grew or had risen to the surface during MLF they don’t look white or powdery. I hit it with SO2 but just wanted to take a poll to see what you all think it looks like. I’m about to rack into barrels and wasn’t sure if I should be concerned. Maybe I’ll rack and just leave the surface wine behind and add an additional 20 ppm during the racking to account for any bad guys that were bound up after my recent addition? Any thoughts are appreciated.
