I picked up my organic perservative free cider yesterday on the way home from our weekend away . I will get it started when I get home from work . i have 20 liters ,think I will do 10 plain and 10 with cinnamon . So would it be aright to add the cinnamon after it goes into the carboy ?
 
This is the first time that I have added cinnamon and I added mine to the primary. I am still in the live and learn stages of adding cinnamon so I dont know which would be better, primary or secondary. I have heard both ways, so to answer your question I think yes you could add it in during secondary.
 
Darlene, last years batch I used cin. sticks in the carboy for 5 months of aging. This season I added cin. powder to the primary. We'll see later how it turns out. The sticks added a nice flavor, not over powering.

I have 6 gallons of cider I'll start in awhile and I think I'll use honey instead of sugar.
