i'm back from a little time away, we're still brewing, I had a delightful surprise recently when we opened a bottle of loquat from last season, 16 months old and I have to say, this is by far my favorite wine, aging treated this wine superbly. any of you tried loquat ? I would recommend you giving it a go if the fruit becomes avalible, you won't be disappointed

I've been documenting my loquat wine experience on this thread.
What recipe did you use? I was following Keller's, and he calls for almonds in the secondary...was thinking of making it easier on myself with some almond extract.
 
stress baby, I didn't keep a record of the recipe I used, I do remember I just took a shot in the dark. I recall I used 45 pounds of fruit to make a 6 gallon batch. worked out great . I even came up with a solution to remove the seeds from the pulp. so I used only the juice and pulp and skins on primary fermentation
