What is saigee and where can you get it?
Klein, Saignee is a process employed when making wine from grapes to intensify the wine by drawing off a quantity of the juice after the grapes have been crushed. In essence, it increases the ratio of grape skins to grape juice, resulting in a richer more tannin wine. The juice that is drawn off is also fermented on its own and produces a Rose' wine.
