While placing the air lock/ bung into the top of my primary pail I noted a few MLS of sodium metabisuphite from the airlock leaked into the must(Shiraz wine kit - California connaiseur) as I was closing up the pail, will this cause a problem? Also how long before you see fermentation start, been a few hrs at 74F

Thanks

Just cover the pail with a towel; that is what most do. The must needs oxygen in the beginning. The little bit of Kmeta will not cause any harm. Once the G is down to about 1.020 then rack to secondary OR then lock down the pail cover and ferment to dry.

For future reference put the filled airlock in place before snapping down the lid.

A few ml should not hurt. Normally, you will not see fermentation until 24-48 hours.
