So the waiting time begins. 1) Merlot 2) Guava (canned shells using Jack Keller recipe. Hope the guava turns out good. Going to do a bow off setup to the guava, the fermenter is 6.5 and I filled tio the 6 gallon mark because when I remove the fruit bag it drops to about the 5 gallon mark. I wonder if I can use a pond grigio to top off when racking or mix guava juice with vodka. Any suggestions will be great.
