At various points I have said that wine is a preservative system/ a fence with several layers keeping food poisoning organisms out. At pH 3.2 to 3.5 with 11% alcohol and treating with 50ppm SO2 and six months age in an anaerobic environment one should be free of Listeria.bah, potential
