The recall means that the lot(s) in question have been tested and that organism was detected. It also means that Listeria is able to make one sick, cause an infection that produces toxins which can make one sick. Depending on how honest management is it may mean that a retest was done and also came back positive. ,,, some managers believe the micro test the first time, ,,, some don’t

At various points I have said that wine is a preservative system/ a fence with several layers keeping food poisoning organisms out. At pH 3.2 to 3.5 with 11% alcohol and treating with 50ppm SO2 and six months age in an anaerobic environment one should be free of Listeria.

The question starts to be ,,, will you taste the must since at that stage of the game the risk is still there.
 
* first and foremost a Listeria recall means that it is being tested, ,,, folks are looking for it. Another way to say this was decades ago Listeria wasn’t a problem. Some was found in milk plants related to floor drains. Next came processed meat. These both are refrigerator case/ buy and eat foods. In the soy lab I would mainly run salmonella, E. coli, and clostridium. ,,, Things that were considered a risk.
* last years numbers were that about 45% of the food production was lost in the total chain from farm to homemaker. “fresh and tender fruits” as a group wouldn’t be very different this year. The production system takes years to change as Incredible burgers are there but only in the $100 million range.
* The market is changing from raw ingredient to more prepared ingredient. This means that it has production dates, may sit in a refrigerator six months, as an aseptic 12 ounce to 1000 pound pallet for two years and in a freezer a year. This lets the factory test and have results out in five days and react before someone gets sick. In the juice market I am amazed how much is coming from Brazil and China.
* cost per unit, ,,, the industry is consolidating so a national brand HAS to look for it. example shutting down one baby formula factory removed 45% of the US supply. Think that was a Listeria issue in the pipes/ cleaning stainless steel.

* if you cook it the organism is gone
