Transferred my other two CC kits the secondary last night. There are a lot of lees, 2 liters each. I learned from here that I can collect them to further settle. That's what I did. I used the 2 liter juice bottle to hold them. and after a night, there is maybe 1/5 of clear layer.
I decided not to wait. I added the fining agent into them just now. I know if I age the wine, I probably don't need the fining agent, so I will use them here to speed up the settlement .
