I just picked 14# of figs and can get lots more so I was wondering if anyone has a good recipe for it since this will be my first trial batch. Any suggestions are welcome as always!!
 
Allison, try this for fresh figs. I make this every year. I've varied the yeasts several times to check for different outcomes.

<LI>4 lbs figs
<LI>7 pts water
<LI>1-3/4 lbs granulated sugar
<LI>3-1/2 tsp acid blend
<LI>1 crushed Campden tablet
<LI>1 tsp yeast nutrient
<LI>1 pkg Montrachet wine yeast </LI>
 
I to am looking to make a fig product but I think grappa,thats more of a brandy..............................or a fig cello
