Just pitched the yeast on 6 gal cherry ( pie cherries). Yesterday I transfered the white grape-Pomegranate to secondary (3 gal.) I have some choke cherries, Wild grapes,& Wild plums still in the freezer that I hope to start next week.
 
Given pie cherries, my guess is that they're pretty acidic. Sounds great. The wild grapes & plums should have a lot of flavor. Having frozen them should facilitate extracting the flavor. Congratulations; it'll be good to hear how things progress on these.
 
Just love that choke cherry wine....working on the third batch from last year....
 
The cherry is fermenting like gang busters and has an awsum cherry aroma. The pomegranate has slowed to almost a stop. So all is well in Iowa.
