I have 12 gallons (2 buckets) of crushed Chancellor grape must. Saturday night I put a 1/4 teaspoon of sulfite in each bucket. Sunday night I pitched 71B Lavin yeast. I also added nutrient and energizer. 12 hours later nothing is happening. Do I need to wait longer? Brix was at 22, ph was about 3.6, and acid was right at 1%. Temp is 70. Just don't want it to go bad, I crushed it all by hand and have a lot of time into those 12 gallons.
