I echo your enthusiasm for elderberry wine. Next year I am going to go foraging for enough for fifteen to twenty gallons of wine. I found that 15 pounds of elderberries was enough for 6 gallons of wine, and the finished wine needed no f-pak. I used a cote-de- blanc yeast.

My freezer went on the blink with about 20 gallons of various fruits. Since the freezer was still cold but did not keep the berries frozen, I threw away all the berries except the elderberries. When I thought about all the work I did to get the berries I took a chance that the wine would make. No problems whatsoever. In fact, I wonder if the accident contributed somehow to the excellent results.
