I found this basic scale:
1. 0.990-1.000 Dry
2. 1.000-1.010 Medium Sweet
3. 1.010-1.025 Sweet
4. 1.125 & up Very Sweet
I read wine can go to .96 as well.
Some questions questions:
1) I am going to do first rack at 1.02, should I then test the racked wine periodically to ensure I do my final rack at my desired level?
2) Since I am racking at 1.02, it appears you could hypothetically add the sorbate right now and filter the wine and drink it?
3) At my 1st racking is it normal for us wino's to taste the wine ? Will it taste anything like final product?
