My hydrometer is floating but the paper scale is below the wine. I was waiting for 1.020 before I remove the fruit but I didnt have time to check yesterday. It was 1.033 the day before. I adjusted the SG from 1.050 to 1.075 before pitching the yeast. Im draining the juice off now. Is it done already? Should I just let it stand a day or two and then rack. Its been five days since I pitched yeast. I wanted to add oak after removing the fruit. CanI still do that?

hard to say. Could be. is it reading .990?
Whats the temp?
 
70 degrees. I took another reading after draining the juice off and stirring. I got 1.005. could it be a lack of air because of the cap?
 
Yes. leave it for a week and then ck the gravity.

Dont rush the wine.
