Wanting to make a bold red,with hints of chocolate at the end, anyone have a suggestion for a variety to be se, Shiraz reads interesting but someone may have a better idea, would like a merlot/black currant texture with the choc, aftertaste, trying to get ready by Christmas , so might not have time to add chunks to secondary and rack to bottle by then,

Not to burst any bubble, but to fulfill your request you should aim for Christmas 2015. Your best bet for Christmas 2014 would be a chocolate/raspberry port. But hurry.

I agree with JMK regarding the timing, but the kit that most closely describes what you are looking for is the CC Showcase Walla Walla Cab Merlot. I have made all the CC Showcase Reds as well as all the WE Eclipse Reds...
