Going to be starting my first batch of homemade wine soon. Going to make blackberry wine using jack Kellers medium bodied sweet recipe.

I was wondering if I can make a 3 gallon batch in a 6 gallon carboy? Or does the carboy have to match the batch size so it's full up to the neck of the carboy? Thanks.

the larger carboy can be used during fermentation as the co2 generated during fermentation will protect the wine. post fermentation should be in the 3 gallon.

... + 1 on that, but just to be clear, we are talking about using a larger carboy as a primary fermenter. Once fermentation is complete you need to put your wine into an appropriate sized carboy, where the wine comes up to the neck.
