put the kit to work last sunday, calls for 7 days in primary but this evening the hydrometer says to rack into secondary, a taste test shows dry but still a little fermentation going on. i moved into secondary at 5 days. fermented hard for four days . i noticed the airlock had slowed quite abit since this morning. i guess it will be fine. i'll let it go in secondary to day 20 as recommended and see what we have then
have to say, the taste test is nice now but i know abit more dry should be seen later. didn't fill to 6 gallons as recommended but tried 5 1/2 . wine has a really deep color and beautiful aroma of dark berries
