To be truthful, I only rack when I get a layer of lees on the bottom of the carboy. My thoughts are when you rack, you stand a chance of adding oxygen to your wine. Arne.
I dont rack very often either. After adding the clearing agents, i wait 3 weeks and then rack for bulk aging. Most of the lees have dropped by then. After that it is just fine stuff. Was just wondering if there was some additional benefit to racking at 3 months vs 6.
