Hi

Is it better to taste and back sweetening wine before you use fining agent just in case The sweetening would cloudy The wine again.

When back sweetening apple wine is it better using sugar og contentrate ? Contentrate would make it fruity again BUT will it cloudy The wine ..... HATE clouds..
 
I use straight sugar and only after clearing. I've found that adding it before can mess up the clearing process. I suppose it could be the fact you have to add potassium sorbate before back sweetening and it has been known to interfere with the clearing process.
 
If you have properly bulk aged your wine, adding sugar will not make it cloudy.
