I want to start a batch of apple wine from juice But I dont have Tannin and Anti Oxident can these be added later like mondat or should I wait never mind on the Anti"s needed to read inst. again, but still how about the tannin, and should I be mixing this in a S.S. bucket or is it OK to just dump it all into primary and it's pure juice just picked up from the orchard $5 wow.
 
I would addthe tanninbefore fermentation and no it doesnt need to be fermented in stainless. Using your plastic fermenter is fine, assuming it is food grade plastic that is.

I've added tannin post fermentation many times with success. Just make sure you don't let it clump up if using it later and use it before you add a clarifier. Cheers!
