I really had good luck with a packlab 4 week chardonnay. I added a small amount of white grapes for body.
I want to make a Chateau du Reserve riesling from Amazon. I don't think I should add raisins as it may take away from the crispness of a riesling.
Any ideas? How about some apple concentrate added before fermentation?
